In the clip we can see that Docs eye line is looking down at the men who are sitting down as he speaks to them. We can see as he speaks they look up at him, except when the speak to each other when they look at each other. Even when the camera angle changes the eye line is kept the same, this is to ensure that the clip runs smoothly and it is clear who each character is speaking to.
As the camera changes places to behind the plumbers back the action of him eating a sandwich is kept the same, this is an action match which is to make the reader think that the scene was all shot in one go. We can still see that the plumbers eye line is on the Doc so that we know that he is still speaking to him. Wherever the camera is in the room the plumber still has the sandwich in his had and his action is always the same or connected with his previous action.
When the plumbers son is on the phone he can be seen picking up the phone. In the next cut the camera shot has changed but the action of the son has only progressed to him actually being on the phone. This leads on very smoothly from the last shot and as the audience you would barely even register that there was a change.
